We often cooked filled calamari back than, when I was still in Aachen. We always used minced meat as stuffing because the recipe said so :-P. A few days ago my girlfriend bought some calamari from asia store and I wanted to make filled calamari again, this time I didn't filled it with minced meat but with with fresh with mushrooms (champignon) and fresh cucumber. 2 big calamaris (about 7 inches) 3.5 oz white mushrooms (champignon) 1/2 cucumber (sliced small) 1/2 fresh citron juice 1 tsp marjoram 1 tsp thyme 2 tsb basil 2 tbsp white wine 1 spring onion salt and pepper Mix all ingredients except calamaris in a bowl. Add olive oil to ease the stirring. Fill up the calamaris and pan-fry them evenly for about 10 minutes. Before serving, give some citron juice again over the calamaris. If you like, you can also add some chilli to the filling, it would taste wonderfully with the whole fresh ingredients. Enjoy !
