carrot-minced meat soup

Maybe not an extraordinary recipe. But it's simple, quick, delicious and I'll bet you'd like it. The recipe makes 4 servings.

Ingredients :

3 onions
1 garlic clove
4 carrots
2 tbsp butter
1/2 tsp turmeric
1.8 oz red lentils
1 L buillon
200 ml orange juice
2 tbsp oil
0.5 lb beef minced meat
1/2 bunch of parsley
salt and pepper

Cut the onions into small dices. Chop the garlic. Peel and wash the carrots, then cut them into big pieces.
Heat butter in a cooking pot. Put in onions, garlic and turmeric. Season with salt and pepper. Add red lentils and carrots and cook for another 2 minutes.
Take out 1 tbsp red lentils from the pot, put aside to garnish the dish later.
Add buillon and orange juice. Let the soup simmer for another 10 minutes.
Meanwhile, heat oil on a pan. Add minced meat and cook for about 5 minutes. Season with salt and pepper.
Wash parsley and cut into filligree stripes.
Puree the soup with a hand mixer. You might want to add some water, if the soup is too hard / not fluid enough.

Arrange the soup in bowls. Add fried meat, red lentils and parsley to each bowl. Enjoy your meal !
