Perfect dish for spring time! A light bean salat with a little touch of hot chili. It's also healthy. White kidney bean has been shown to be of great value in reducing the rate at which starch is converted to sugar in the digestive process, thus reducing caloric uptake.  In addition to its value as a weight loss supplement, White Kidney Bean is also a healthy source of protein and fiber. White Kidney Bean has been grown as a food crop in the New World for over seven thousand years.  It has been a staple of the South American diet for centuries and has been cultivated worldwide in the post-Columbian era.  The taste of the White Kidney Bean is more delicate than the red and is thus used in salads and in other dishes where the more pronounced flavor of the red kidney bean would be a distraction.  In addition to its value as a food product, White Kidney Bean has also been used as a curative.  Soon after Europeans adopted it as a food, White Kidney Bean began to appear in folk remedies for a variety of ailments, especially coughing due to consumption or bronchitis.  Recently, the use of White Kidney Bean has focused not on its value as an expectorant, but on its ability to block starch absorption.  Many studies have shown that White Kidney Bean interrupts the digestive process that converts starch to sugar, thus lessening the carbohydrate absorption from foods such as bread and rice.  By reducing the absorption of these sugars, the body has fewer calories to store as fat.  White Kidney Bean can be a very effective supplement for dieters and those interested in maintaining a healthy physique.

So, the ingredients for the salad :
3.5 oz white kidney beans
1 spring onion
1 red chilli
1 tomato
1 clove of garlic
2 tbsp olive oil
1 pinch of sugar
1 tbsp white wine vinegar
salt and pepper 

Cut the spring onion into 1 cm small pieces and the red chili lengthwise. Remove the seeds from the red chili then cut into small stripes. Cook the tomato 1/2 minute in boiled water. Then quench with cold water. Take off the tomate skin with a small knife. Cut the tomate into small dices and chop the garlic.
Heat 1 tbsp oil in a pan, then stew the chili pieces. Give sugar into the pan and let it caramelize. Add spring onion, salt and pepper. As soon as the spring onion turns brown, add white kidney beans and tomato dices. Stir, then quench with white wine vinegar.
Pull the pan from the stove and let it cool down. You can add some basil and parsley leaves before serving. Enjoy it !
