oven baked lemon chicken

I had chicken pox since about 2 weeks ago and now I'm doing much better, thanks to my friends and especially my girlfriend, who really took care of me while I was lying in bed with 105°F fever. Love u, Cath! So, since now the chicken pox almost disappears completely, I wanted to express my gratitude with cooking a chicken (without pox), an oven baked lemon chicken. The combination lemon and chicken is a conventional one but I always love this combination. So, actually it's a really simple dish. You'll need :

1 whole chicken
3 carrots
2 red/green peppers
2 spring onions
1 lemon
1 tbsp salt
1 tsp pepper
1 tsp basil (chopped)
1 tsp rosemary (chopped)
1 tsp marjoram (chopped)
1 tsb thyme (chopped)

Cut carrots, peppers and spring onions into big pieces and place them in a casserole. Put the chicken on top of the vegetables so that the chicken won't swim in its own fat. Cut the lemon in half. Press one half and marinade the chicken with the juice. The other half comes in the chicken. Marinade the chicken with salt, pepper and the herbs. Bake in preheated oven for about 30 minutes (400°F) until the chicken turns brown. Easy, isn't it ? enjoy !
