pork amaretto coconut

This tasty dish fits wonderfully in christmas time. It's deliciously oily and alcoholically exotic. I came to this idea, because my girlfried has a bottle of amaretto in her refrigerator and she used it presumably only once to make a tiramisu. By the way, for those, who don't know, amaretto is an Italian liqueur, made from almond and/or apricots stone/pit with 25% alcoholic strength. Usually amaretto is used for deserts, such as tiramisu, but I wanted to try it on a meat.

This is all you need :

 

1/2 lb (200 gr) pork
2 tablespoon amaretto
4 tablespoon grated coconut
2 cloves garlic, minced
1 teaspoon nutmeg powder
2 teaspoon parsley leaves, minced
salt and pepper

Cut the pork into 4-5cm pieces. In a bowl, mix all the ingredients, then put in pork. Make sure that all the pork pieces are completely in the marinade. Put the bowl in refrigerator and wait for about 3 hours (suggestion : overnight). Before frying, cover the marinated meat with grated coconut. Fry them in pan until brown. You can serve the dish with smashed potatoes, fried potatoes, or also rice. Enjoy !
