roast pork thai style

To make 4 servings you'd need :

1 piece (about 2.8 oz) ginger
5 garlic cloves
1 chili pod
4 tbsp sesame oil
5 tbsp honey
80 ml soy sauce
1/2 tsp ground coriander
2.6 lb pork belly boneless
red pepper and onions to garnish
salt and pepper

Peel and chop ginger and garlic cloves. Slice chili pod and remove the seeds. Then chop the chili pod. Mix ginger, garlic, shili, sesame oil, honey and soy sauce in a bowl. Add coriander, salt and pepper. 

Marinade the pork belly with the sauce above. To reach the best taste, you might put the marinated meat in refrigerator overnight. But it's optional.

Put the meat on a baking tray. Insert it to a preheated oven (convection oven : 175°C / 347°F) for about 1,5 hours. Then spread the rest of the marinade on the crust and roast for another 10 minutes.

Remove the roasted pork from the oven, cut them into pieces and garnish with red pepper and onions. Serve with basmati rice. Enjoy !
